Equipment needed

Ingredients

  • 420g fresh-milled hard white wheat flour (3 ½ cups)
  • 240g warm milk or water (1 cup, about 90°F)
  • 56g softened butter (4 Tbsp)
  • 67g white sugar (⅓ cup) OR 113g honey (⅓ cup)
  • 2 large eggs, room temperature
  • 1 tsp salt
  • 2 tsp instant yeast

Instructions

Step 1: Mill Your Flour

Mill your hard white wheat berries until you have 420g of fresh flour (3 ½ cups) ready to use.

Step 2: Start the Dough (Autolyse)

Warm 240g of milk or water (1 cup) to about 90°F. Add the warm liquid and the 420g of freshly milled flour to the bowl of your stand mixer. Mix on low for just about a minute, then cover and let the dough autolyse for 30 minutes.

Step 3: Add Remaining Ingredients

After the autolyse, add 56g softened butter (4 Tbsp), 67g sugar (⅓ cup) OR 113g honey (⅓ cup), 2 eggs, 1 tsp salt, and 2 tsp instant yeast. Knead on medium speed for 10–20 minutes, until the dough is smooth, elastic, and passes the windowpane test.

The windowpane test is passed when you can take two pieces of dough in your hands and stretch until it is so thin you can see light through, but it does not tear. This means the gluten is well developed.

Step 4: First Rise

Lightly oil the dough, cover the bowl, and let it rise at room temperature for 1–2 hours or until doubled in size.

Step 5: Shape the Rolls

Turn the dough out onto a lightly oiled surface and divide it into 12 rolls, roughly 90g portions. Roll each piece into a smooth ball, gently pull them against the counter a bit to create some surface tension. Place them into a parchment-lined 9×13 baking dish.

Step 6: Second Rise & Preheat

Cover the rolls and let them rise for 30–40 minutes, or until noticeably puffy, while you preheat your oven to 350°F.

Step 7: Bake

Bake the rolls for 20–25 minutes, until lightly golden.

Step 8: Finish

As soon as the rolls come out of the oven, brush the tops generously with melted butter. These are best served warm!
