Yolky Lattes are delicious and nutritious, but let’s cover something I always get asked when sharing about them. “But I thought raw eggs weren’t safe…..”

My short answer: It depends who you ask. Historically, raw eggs, much like raw milk, didn’t become dangerous until chickens and eggs started being mass produced in unsanitary conditions. I personally feel very comfortable consuming eggs raw, when they are from our own chickens in our backyard. We have a very healthy, holistically managed flock. Use your discretion. I would not feel comfortable doing this with store bought eggs, where I can’t see the chickens they come from, or the conditions they live in, or how long they have been on the shelf.

Does your coffee make you jittery?

Been there! If this is repeatedly happening, there are usually two main culprits. You’re either regularly consuming caffeine on an empty stomach and causing a large cortisol spike that your body can’t handle, OR your coffee is moldy. Or in my case, it was BOTH. Yikes. I now consume my coffee AFTER breakfast, which helps me to metabolize it without the crazy stress hormone spikes. We also switched to mold free coffee options like Purity coffee which is third party tested to ensure it is mold-free and mycotoxin-free. Or Danger Coffee, which is another great mold-free option & it contains added trace minerals. There are lots of mold- free options out there, like Paleo Valley coffee, or Equip foods, would be great toxin free options, too!

Ready to make your own? I’ve broken it down for you below:

Gather Your Ingredients

  • 1 pasture raised egg yolk
  • 1 tsp of raw organic cane sugar, honey, or my personal favorite, maple syrup! (this is very mildly sweetened so add more if you like it sweeter)

  • Double shot of espresso (you could substitute brewed coffee or your choice here, if you don’t have an espresso machine.)
  • 8oz of raw milk, steamed
  • A homemade marshmallow or some cinnamon, if you’re feeling fancy

Make A Yolky Latte, Step-by-Step

  1. Separate the egg yolk from the white. In the bottom of your mug, whip the egg yolk and 1 tsp sweetener together by hand, to a custard-like consistency.

2. Add 1 scoop of grass fed collagen and whip until smooth and creamy.

4. Finally, top with 8oz of our raw milk, steamed. (Can substitute creamer of choice here, if using brewed coffee)

5. For a fancy addition, I’ll top with my egg white marshmallows, and some cinnamon.

Yolky Latte Recipe Variations:

This yolky latte is my base recipe, but it has endless variations. Some of my personal favorites are:

Iced Yolky Latte with a Maple Cinnamon Cold Foam

Use the yolky latte base and follow steps 1-3. Top with 8 ounces of cold raw milk. Make a cold foam for the top by combining 2-3 ounces of raw heavy cream or half and half into a jar, with 1 tsp of maple syrup. Use a frother to whip the cream until it thickens, about 1-2 minutes. Pour over your latte and sprinkle with cinnamon. Enjoy!

Other fun variations:

  • Iced Yolk Latte – Make any of these variations iced by following steps 1-3, then adding the milk cold, instead of steamed. Serve over ice and enjoy!
  • Vanilla Bean Latte – Add a splash of vanilla or vanilla bean paste.
  • Salted Caramel Latte – Stir in homemade caramel and a pinch of sea salt.
  • High-Protein Frappe – Blend all ingredients with ice (bonus points for adding a scoop of raw milk ice cream!).
  • Pumpkin Spice Latte – Add 1 tablespoon of fresh pumpkin and a sprinkle of cinnamon.
  • Maple Sage Latte – Sweeten with maple syrup and add a dash of sage (trust me on this one!).

Anyway, you get the point! Play with the additions and find your perfect yolky latte.


And even though my coffee is full of protein, I still make sure it’s with/after food. Coffee is a metabolic stimulant and it can cause a major stress hormone spike, if you’re regularly consuming it in a fasted state. Short term, this isn’t a big deal. Long term (later in life) you will see the negative effects of this.

Acres and Aprons
A modern twist on an old Russian tradition. This recipe uses whipped egg yolks and natural sweeteners to create a rich, creamy coffee that’s as nourishing as it is flavorful.
Prep Time 5 minutes
Total Time 5 minutes
Servings 1 coffee

Ingredients
  

  • 1 pasture-raised egg yolk
  • 1 tsp raw organic cane sugar, honey or maple syrup
  • 1 scoop grass-fed collagen
  • 2 shots espresso (can sub brewed coffee)
  • 8 oz raw milk, steamed
  • 1 dash cinnamon optional

Instructions
 

  • Take one pasture raised egg, separate the white from the yolk.
  • In the bottom of your mug, whip the egg yolk and sweetener of choice together by hand to a custard-like consistency. This takes just a minute.
  • Add 1 scoop of grass fed collagen and whip until it is smooth and creamy
  • Optional add ins here: see notes for variations
  • Add a double shot of espresso, slowly poor espresso into egg yolk mixture while siting continuously.
  • Steam 8oz of raw milk, or milk of your choice.
  • Finally, top with 8oz of raw milk, steamed.
  • For a fancy addition, I'll top with my egg white marshmallows and some cinnamon. See variations for other options!

  • Recipe variations:

  • Brown sugar latte – Substitute the sweetener with brown sugar, follow the other steps as listed.
